Whole30 Day #60: COMPLETED!

It’s day 60. I can hardly believe I completed 2 months of Whole30. I’ve never gone 2 months without eating “off plan” in my life. No gum or sweets. No grains or dairy. And NO PEANUT BUTTER. This is it; I’ve finally found a program that will work for me. And boy did it work!

 

Oh the Things I’ll EatHashbrown Haystack_Day60 Completed

For the last few weeks, I’ve been daydreaming about all the things I’d eat once we completed 2 rounds. Yet, now that I’m here, I’m not really that excited. All those things don’t even sound good. You know what DOES sound good? Sweet potato hash browns and eggs! So I tried something new — yeah, found it on Pinterest. Doesn’t it look good? I’m also surprised that 2 months later, I’m still trying new recipes. Compliant foods aren’t boring me yet!

 

Seth and I have a list started of things we’d like to try. We’ve agreed that, if it’s not on the list, we won’t eat it! I am interested to see how long we can stick to that… but right now, we are committed. There’s some yummy things on there like Honest Abe’s burgers, Hurt’s Donuts, ice cream cake 🙂 And no, we won’t do them all in one weekend. But I think it’s funny that some of my good friends would wonder.

 

Spicy Shrimp_CompletedThe Finale

Our typical Thursdays are quite busy in the evening, so I didn’t have a ton of time to make dinner. There was shrimp in the freezer (just needs to thaw) and LOTS of zucchini. So I made a spicy shrimp zoodle dish and it was a huge hit. It was nice because I could make it before my commitments so we could warm it up when we got home later in the evening. Plus I made enough for lunch tomorrow! A day we can eat whatever, but we’d prefer Whole30!

 

Neither one of us really care about being done. We don’t even have eating plans for the weekend. But, I am full of excitement to get on the scale tomorrow. It feels like there’s been a change there! 🙂
